The winery was designed to be completely invisible, so as not to disturb the surrounding landscape, but inside, the technology is state-of-the-art and all about sustainability for the environment and employees.
We have purchased NASA-patented AEROCIDE air purifiers, which allow us to make our cellar free of mould and contaminating bacteria, avoiding the need for sterilisation using environmentally harmful products.

Much of our energy autonomy is guaranteed by photovoltaic panels. Domotics and remote control of all the cellar equipment, from the vinification tanks to the aeration systems, from temperature control of the vinification tanks to that of the cellar, allow us to limit energy-intensive activities to situations of absolute necessity.
All because, during the first interview, the man who became our oenologist, upon hearing that the winery was organic, said: “we have to work as if we were in an operating theatre”. Then the owner raised the stakes: “we add no sulphites”. The proof that the winery had found the right in-house oenologist came during that interview, when the candidate replied: “so it’s as if we’re in intensive care!”. No matter what time of day or year you visit, you will always find everything perfectly tidy and sanitised.
This is the only way to work to ensure that the wines are technically perfect in a sulphite-free regime.
