Grape varieties: Organic Bombino Bianco (85%), Trebbiano della Fiamma (7%), Albana (3%) and Grechetto Gentile (5%) grapes, hand-picked, with no allergens and no added sulphites.
Vinification: the organic grapes are vinified on-site, in steel tanks, with no allergens and no added sulphites. The individual varieties, which come from different vineyards on the same estate, are vinified individually to emphasise and enhance the individual characteristics of each grape. Upon completion of the vinification process, these historical white grape varieties, bound so closely to their terroir, are combined to create a well-balanced blend.
The fine sparkle of this wine is obtained by assisted spontaneous refermentation using the Charmat method (in autoclaves). This means that the wine, with its naturally high sugar level and high indigenous yeast content, starts to re-ferment from the third month of vinification. The development of the bubbles is monitored constantly until the end of re-fermentation, after which the wine is left to rest on its lees in steel autoclaves for a minimum of forty days. This method gives the wine a rich bouquet and a distinctive perlage. The sparkling wine is then bottled in the traditional manner and undergoes at least six months’ bottle ageing at an altitude of 1,000 metres before being served.
